Instructions

  1. Place bulgur wheat in bowl. Pour boiling water over bulgur and mix. Let sit for 30 minutes.

  2. In separate bowl, mix olive oil, lemon juice, salt, oregano and cayenne pepper.

  3. Add scallions, parsley, tomato, and olives to bulgur. Pour oil mixture over bulgur and vegetables. Stir well.

  4. Best if refrigerated at least 2 hours before serving.
