Tear lettuces into bite-size pieces and place in a large bowl. Chill. When ready to serve, add cheese, onion, scallions, bacon (if using), and cayenne nuts. Toss with vinaigrette and serve immediately.
- Cayenne Nuts

Preheat oven to 250°F. Line a jelly roll pan with foil.

In a heavy skillet over low heat, combine sugar, butter, orange juice, salt, cinnamon, cayenne, and mace. Stir until butter melts and sugar dissolves. Increase heat to medium, add pecans, and toss until coated.

Spread nuts in a single layer on prepared pan. Bake for 1 hour, stirring every 15 minutes. Remove to rack and separate nuts with a fork. Cool completely.

Store in an airtight container up to 5 days or freeze up to 1 month. Bring to room temperature before serving. If sticky, reheat on a foil-lined pan at 250°F until crisp.

Combine all ingredients in a blender or jar and blend or shake until emulsified.
