Instructions

  1. Place 2 cups of water in a small saucepan with a pinch of salt. Heat to boiling. Rinse quinoa in a fine-mesh strainer under cold water, drain. Add quinoa to boiling water, stir, reduce heat to low. Cover saucepan and cook over low heat for about 15-18 minutes or until water is absorbed. Remove quinoa from heat, fluff with a fork, and let cool slightly. Transfer to a large bowl, fluff again with a fork and let cool for ~20 minutes.

  2. Add all other ingredients. Stir well and serve immediately. Leftover salad keeps well for a day or two.
