White Chili
Instructions

If using fresh beans, soak beans overnight, then drain.

Cook beans in fresh water until tender; drain and set aside.

Heat oil in a large pot. Sauté onion and garlic until softened.

Stir in flour and cook briefly, stirring constantly.

Gradually whisk in chicken broth until smooth.

Add cumin, coriander, oregano, salt and cayenne.

Stir in beans, chicken, and corn; simmer until heated through.

Serve topped with green onions, Monterey Jack cheese, sliced avocado, tortilla chips and fresh cilantro.
