Shrimp and Mushroom Linguine

Shrimp and Mushroom Linguine

Instructions

  1. In large skillet, melt butter over medium heat and sauté shrimp for 2-3 minutes or just until shrimp turn opaque (don’t overcook).

  2. Remove shrimp and set aside. Add mushrooms to skillet and sauté for 5 minutes.

  3. Add tomatoes to skillet and cook for 3-4 minutes.

  4. Season mushrooms and tomatoes with salt. Slowly add cream and cook until sauce is reduced by 1/3 (about 5-7 minutes).

  5. Stir in Parmesan and cook until melted and well combined, about 2-3 minutes.

  6. Stir in basil, brandy flavoring and shrimp. Cook for 1 minute until shrimp is warm. Add hot, cooked and well-drained linguine to sauce. Stir gently for 1 minute until sauce is well combined with noodles.

  7. Place in serving dish. Sprinkle with additional grated Parmesan cheese if desired. Serve immediately with crusty bread. (Goes well with cooked peas.)
