Shrimp and Mushroom Linguine

In large skillet, melt butter over medium heat and sauté shrimp for 2-3 minutes or just until shrimp turn opaque (don’t overcook).

Remove shrimp and set aside. Add mushrooms to skillet and sauté for 5 minutes.

Add tomatoes to skillet and cook for 3-4 minutes.

Season mushrooms and tomatoes with salt. Slowly add cream and cook until sauce is reduced by 1/3 (about 5-7 minutes).

Stir in Parmesan and cook until melted and well combined, about 2-3 minutes.

Stir in basil, brandy flavoring and shrimp. Cook for 1 minute until shrimp is warm. Add hot, cooked and well-drained linguine to sauce. Stir gently for 1 minute until sauce is well combined with noodles.

Place in serving dish. Sprinkle with additional grated Parmesan cheese if desired. Serve immediately with crusty bread. (Goes well with cooked peas.)
