Instructions

  1. Heat the oil in a heavy pot. Add meat and brown.

  2. Add the onions and carrots. Saute for 5-7 minues. Add the tomatoes, seasonings, barley and 7 cups of water. Bring to a boil, lower heat and simmer for around 2 hours, until meat is starting to fall off the bones.

  3. Remove the meat and bones from the soup and cut meat into 1-inch pieces. Add the meat and mushrooms to soup. Cook for 5-10 more minutes or until mushrooms are tender. Stir in parsley and serve.
