Sesame Chicken

Combine the sugar and soy sauce in a small saucepan and heat until sugar dissolves completely. Remove from heat. Stir in sesame oil and sesame seeds. Cover to keep warm.

Place flour in large plastic bag. Season with salt and pepper. Dredge chicken pieces with flour mixture. In a large frying pan heat the oil. Shake excess flour off of chicken pieces. Working in batches, fry chicken pieces until golden on all sides, about 3 – 4 minutes. Drain the cooked chicken on paper towels and set aside, cover to keep warm until all chicken is cooked.

Toss the chicken with the sauce to coat well. Place on platter to serve. Top with chopped scallions. Serve with rice.
