Puff Pastry Veggie Quiche

Instructions

  1. Unroll each sheet of puff pastry on large baking sheet lined with parchment paper.

  2. Sauté mushrooms and shallots in 2 tbsp. butter until golden, drain if necessary.

  3. Place cooked mushrooms and shallots and steamed asparagus tips on puff pastry sheets, dividing evenly between sheets. Top with 1 c. grated Swiss cheese.

  4. Blend remaining egg/sour cream ingredients in blender. Drizzle egg/sour cream mixture evenly on top of puff pastry sheets.

  5. Bake at 400 degrees for 25 minutes or until puffed and golden.

  6. Optional – add goat cheese dollops before baking. Extra yumminess.
