Pan Seared White Fish with Spicy Tomato Pan Sauce

Wash and dry fish fillets. Heat oil in heavy large skillet over medium-high heat. Sprinkle fish with Old Bay seasoning, salt and pepper. Add fish to skillet and saute until just opaque in center, about 3 minutes per side. Cook in batches if needed. Transfer fish to platter. Keep warm in oven at lowest setting while you make the pan sauce. To serve, ladle sauce over fish.

Add red pepper and parsley to same skillet that fish was cooked. Saute for 1 minute, scraping up bits from the skillet. Add tomatoes, olives, and garlic. Saute for 2-3 minutes. Season with salt and pepper. Spoon over meat.
