Creamy Cheese and Chicken Enchiladas

To make sauce, melt butter in saucepan. Add flour and whisk until well blended with butter. Cook flour/butter mixture 2 minutes while stirring. Slowly add chicken broth while whisking. Add seasonings. Cook over medium heat, stirring frequently, until sauce thickens. Stir in sour cream and green chiles. Remove from heat. Spread ½ cup of the sauce on bottom of 9x13 inch glass pan.

To assemble enchilada, fill each tortilla with approximately 1/3 cup cheese, 1/3 cup chicken and 1 tbsp. green onion. Roll each and place in glass pan. Pour remaining sauce on top of enchiladas.

Bake at 350 degrees for 30 minutes. Sprinkle 2 tbsp. green onions down center of enchiladas. Optional garnish – sliced avocados.
