Chicken Breast in Phyllo Packets

Combine the mayonnaise, scallions, lemon juice, garlic, tarragon, salt and white pepper to make a sauce. Wash and pat dry the chicken breasts. Lightly sprinkle the chicken with salt and pepper.

Unroll the phyllo, cover with waxed paper and then a slightly damp kitchen towel to keep it from drying out. Place a sheet of phyllo on a flat surface. Brush with melted butter. Place a second sheet of phyllo on top of first. Brush with butter. Place a third sheet of phyllo on top of second. Brush with butter. Spread about 1 ½ tablespoons of sauce on each side of a chicken breast. Place the breast on one end of the phyllo sheets. Fold the end over the breast. Then fold in sides and roll the breast up in the sheets to form a package. Brush packet with butter and top with grated Parmesan cheese. Continue this procedure with remaining chicken breasts. Bake at 375 degrees for 25 minutes or until deep golden color. Serve hot.
