Cheesy Chicken Strudel

Instructions

  1. In medium skillet, saute chopped onion and mushrooms in oil until tender and liquid is absorbed. Add spinach and cook until wilted, about 3 minutes. Remove skillet from heat and let cool for 15 – 20 minutes. Stir in cheese, broth, Greek seasoning, pepper, egg and chicken until well combined. Set aside.

  2. Place 1 sheet phyllo dough on waxed paper. Brush phyllo with melted butter and sprinkle with 1 tbsp. bread crumbs. Layer with 4 more sheets of phyllo, brushing each sheet with butter and sprinkling with bread crumbs. Spoon 1/4 of chicken mixture in 2 inch strip along bottom length of phyllo. Roll phyllo dough jellyroll fashion. Place on lightly greased cookie sheet. Score diagonally 3-4 times with sharp knife. Brush with butter and sprinkle with paprika. Repeat with remaining ingredients to make a total of 4 rolls. (Rolls may be made ahead at this point and refrigerated. Cover tightly with plastic wrap. Add 5 additional minutes to baking time if refrigerated.) Bake at 375 degrees for 15 – 20 minutes. Serves 8 – 10.
