Poppyseed Cake

Instructions

  1. Cake
  2. In a medium size bowl, whisk together: 3 c. flour, 1 ½ tsp. baking powder, 1 tsp. salt

  3. In a large bowl, mix together until well combined: 2 ½ c. sugar, 1 c. milk, 1 1/8 c. oil (vegetable, corn, or canola), 3 eggs, lightly beaten, 2 tbsp poppyseeds, 1 ½ tsp. vanilla, 1 ½ tsp. butter flavoring or emulsion, 1 ½ tsp almond flavoring

  4. After wet ingredients are blended well, add dry ingredients until fully mixed. Pour into 2 loaf pans or 1 tube pan, greased and floured.

  5. Bake at 350 degrees for 1 hour. Remove from oven and let cool for ~20-30 minutes. While cake is still very warm, poke holes on top with a fork. Drizzle glaze over cake. Let cool completely while glaze soaks into cake. (Keeps well frozen)

  6. Glaze
  7. In a small saucepan, add the following ingredients: 2/3 c. sugar, ¼ c. butter, 1/3 c. orange juice concentrate (from the can), ½ tsp vanilla, ½ tsp butter flavoring or emulsion

  8. Heat until sugar melts thoroughly. Mix glaze until smooth and well combined. Pour or spoon over cake.
