Julie’s Cookies and Cream Cheesecake

Preheat oven to 350°F.

Combine cookie crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan and about 2 inches up the sides. Chill.

Beat cream cheese until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and mix well. Gently fold in broken cookie pieces. Pour filling into prepared crust.

Bake 50 minutes. While cheesecake bakes, mix topping ingredients until smooth.

Remove cheesecake from oven and let rest 15 minutes. Increase oven temperature to 450°F. Pour topping evenly over cheesecake and return to oven. Bake 10 minutes.

Remove from oven and cool on a wire rack. Refrigerate overnight before serving. Garnish with whipped cream and mini Oreos if desired.
