French Chocolate Mousse

Melt chocolate and butter together in a heatproof bowl set over barely simmering water, stirring until smooth. Remove from heat and cool slightly. Whisk in egg yolks one at a time. Set aside.

In a separate bowl, beat egg whites until foamy. Add cream of tartar and continue beating. Gradually add ¼ cup sugar and beat until stiff peaks form.

In another bowl, whip cream until slightly thickened. Add remaining 2 tablespoons sugar and vanilla; whip to soft peaks.

Fold egg whites gently into the chocolate mixture to lighten it, then fold in whipped cream just until combined.

Divide into serving glasses, cover, and refrigerate several hours. Garnish with whipped cream and chocolate shavings before serving.
