Instructions

  1. In a saucepan, combine 1½ cups milk, sugar, and cocoa powder. Bring to a simmer over medium-high heat. Remove from heat.

  2. In a bowl, whisk remaining ½ cup milk, cornstarch, salt, egg yolks, and vanilla. Gradually whisk hot milk into egg mixture. Return to saucepan.

  3. Cook over medium-high heat, whisking constantly, until pudding boils and thickens (about 2–3 minutes). Reduce heat and cook briefly until smooth.

  4. Pour into individual cups. Cover and refrigerate at least 4 hours or overnight.

  5. Before serving, whip cream to soft peaks and spoon on top. Serve with a biscotti cookie on the side or dipped into the pudding.
