Instructions

  1. Beat eggs until light. Gradually add in powdered sugar and beat at medium high speed for 20 minutes.

  2. Add ammonium carbonate. Add flour and anise oil, knead on lightly floured board until smooth.

  3. Roll out ¼ inch thick. Press well-floured wooden springerle molds into dough and cut into squares.

  4. Place cookies on parchment lined baking sheets on top of sprinkled anise seeds. Let dry on baking sheets for at least 12 hours.

  5. Bake at 275 degrees for 25-30 minutes. Do not open oven door! Remove from oven and cool on racks.
