Snickerdoodles

In large mixing bowl cream 1 ½ cups sugar and butter. Beat in eggs and vanilla until light and fluffy. In 2nd bowl, whisk together flour, salt, baking soda, and cream of tartar. Add dry ingredients to butter mixture, mix until combined.

In pie plate mix 4 tbsp sugar and 4 tsp cinnamon. Shape dough into 1” balls and roll in cinnamon sugar mixture. Place 2 inches apart on parchment lined baking sheets. Bake 8-9 minutes at 375 degrees F.

Place butter in large mixing bowl and cream until smooth. Add powdered sugar and heavy cream in batches. Whip until smooth. Add in vanilla and cinnamon, adjust seasonings if desired.

To make the sandwich cookies, roll the snickerdoodle cookies into small balls.. Bake and cool. Spread frosting on bottom of a snickerdoodle cookie and top with another cookie.
