Oma’s French Meringue Cookies

Preheat oven to 300 degrees. Line baking sheets with parchment paper.

Whip egg whites until white, add in cream of tartar, salt, and vanilla. Whip until stiff peaks just begin to form. SLOWLY add the sugar and whip thoroughly, mixture should be very light with stiff peaks.

Drop dough by teaspoons or pipe onto prepared baking sheets to form small cookies. Bake at 300 degrees for ~25 minutes. Meringues should not brown, so move sheets’ rack location if needed. Before removing from oven, make sure meringues have cooked enough to hold together if lifted off baking pan. Cool. To store, do not cover with plastic wrap or in closed container as will turn gummy.
