Instructions

  1. Put 3 cups flour in a large mixing bowl. Add yeast and salt. Stir the dry ingredients together. Pour in 1 ½ cups water. Mix the dough together. Don’t over mix. Cover the bowl with plastic wrap.

  2. Let the dough sit for 12-18 hours. When ready to bake, heat your oven to 450 degrees. Once the oven has reached 450 degrees, put a heavy cast iron dutch oven or clay baker with lid in the oven to preheat for 30 minutes.

  3. Get the dough ready. It will be sticky. Heavily flour a surface and your hands. Gently form the sticky mass of dough into a round ball and smooth the surface. Place dough ball on parchment paper and cover with plastic wrap while pots preheat. After 30 minutes, carefully place the dough into the preheated pots. Bake at 30 minutes with the lid on (creates steam) and then remove the lid and bake an additional 15 minutes.

  4. This is a very forgiving and adaptable recipe. When you form the dough, you can add in mix-ins: cheese, herbs, sun dried tomatoes, etc.
