Honey Mustard Prosciutto Palmiers

Preheat oven to 400 degrees F. Lightly flour a work surface and roll out the pastry to 6” by 15” rectangle.

In a small mixing bowl, combine the mustard, honey, and thyme. Spread the mixture evenly on the puff pastry. Cover with the prosciutto slices and sprinkle with cheese. Tightly roll the long sides in to the middle. Brush a little egg yolk on the 2 surfaces where they meet in the middle of the roll. Then press the 2 sides firmly without distorting the shape of the roll. Place the roll on a tray and cover with plastic wrap. Refrigerate for at least 25 minutes.

Using a sharp knife, cut the roll into ¼” slices. Place the slices on a sheet of parchment paper on a baking tray. Bake until golden, about 10 minutes. Remove from the oven and sprinkle with reserved cheese while still warm. Serve warm or at room temperature.
