Cucumber Tea Sandwiches

Place cucumber slices in pie plate and cover with seasoned rice wine vinegar. Marinate for at least 20 minutes and up to 2 hours in the refrigerator to keep crisp. Drain well and pat dry before placing on bread.

Place cream cheese, lemon juice, heavy cream, herbs and seasonings in bowl and blend well.

To serve: Spread cream cheese mixture on cut out bread rounds. Top with marinated cucumber slice, radish slice, and small sprig of parsley. Serve within an hour of assembling so bread does not get mushy.

I have made this recipe for multiple tea parties, baby showers, and bridal showers. If you prefer, you can heat white wine vinegar with sugar to make a sweeter marinade for the cucumbers. Cool this mixture before adding the cucumbers.
